Inspired by Tasty Tidbits blogpost, I had to pin this on my Casserole Board on Pinterest with a little modification to suit my families taste.  What did I do different? I added GARLIC of course.

This dish was inspired by Rachel Ray's Spinach and Egg Casserole. What's the difference?  I just used nonfat milk instead of whole milk, Jack Cheese instead of Gruyere, and Japanese Panko instead of whole wheat.  Oh yeah,  and 5 cloves of garlic! I'm not sure what Rachel Ray's dish tastes like but this imitation is fabulous.  Add diced chicken to it or serve it as a side dish to any meal. The "sweet" theme was inspired AFTER the invitations were sent and the rsvp's started coming in.  Over 10 people regretted they couldn't celebrate our friends 40th because they had other plans.  The adjective "sweet" preceded the birthday girls name in every one of these regrets.

Here is a favorite dish of our family. Enchiladas Casserole. I make it a casserole because I have never had much luck or desire to roll the tortilla around the ingredients. It is too messy and they never stay together.  So I layer my ingredients, similar to making lasagna.
