Decorate with your DNA, lips, and fingerprints

I do not hang anything on the walls in my home unless it is symbolic of who I am. If you visited my home, you would see decorative crosses, mountainous landscapes, pictures of family and friends, and quotes I try to live by.  You would also see three walls I have left bare. Mostly because I didn't want to place something that had no meaning to me. I feel making a home takes time and patience, just as building a life does.  Filling the empty space in ourselves (and our homes) with superficial substances just to make everything "look pretty" will only leave you searching again.

Thai Chicken Tortilla Wraps

Mimi's Cafe used to serve Thai Chicken Tortilla Wraps as an appetizer but they were taken off the menu over 6 months ago (2009).  They come back occasionally as a featured item - January 2011.
This recipe is a family favorite and it will remain on our menu, forever.

INGREDIENTS (serves 12)
6 Chicken Breast
1/2 head Finely Chopped Green Cabbage
1/2 head Finely Chopped Red Cabbage
2 cups Chopped Carrots
3 cups White Sticky Rice
1 bunch Cilantro Finely Chopped
1 bunch Green Onions
1 package Wonton Noodles
12 Tomato Basil Tortillas - Burrito Size
Peanut Sauce used at Mimi's Cafe  (pictured below) Bangkok Pandang Peanut Sauce


HOW TO MAKE AND SET UP A BUFFET:
Boil chicken until tender and cooked thoroughly. When it is cool, chop or shred the chicken. Place on platter.  Mix the chopped cabbage, cilantro, green onion, and carrots.  Place on Platter.   Slice wonton sheets in strips and fry until crispy. Place wonton crisps on platter. Steam white rice per package directions.  Can be made ahead of time.

TO SERVE:
The only ingredients that should be served warm are the tortillas and the peanut sauce.  Warm your tortillas.  Place the ingredients inside and make a burrito - squeezing tightly. Serve the peanut sauce in a ramekin to dip for each bite.  You will want extra - Trust me...it is fabulous!

Random Act of Kindness Charity - HOPEREVO

I discovered this fabulous website that makes a difference for others - anonymously, one note at a time.  
The organization is HOPEREVO and it was started by Krystyn Heide and a friend who chose to spread hope instead of getting depressed by negativity. Read the story behind her Hope Revolution.

I thought this would be a great project for parents to do with their kids.
You can make a difference in 3 easy steps:
1. Write a note with a hopeful message to leave somewhere.  Make it fancy or plain.  It is the thought that will matter most. 
2. Add your messages of hope, and on the back or bottom of the note, include the URL hoperevo.com!
3. Photograph your journey and upload the pictures to Hoperevo flickr pool or the Hoperevo facebook group.

Make Charity a habit.

Have you heard the statement it take 30 days to make something a habit?  It's true. I started the 30 days of ...blog to share inspiration with moms who enjoy working, entertaining, and giving back through charities. The first two weeks were difficult to get into a routine but I forced myself to continue.  By the third week, the routine was set and within 30 days - Bingo, I've created a habit. Now it is a part of my life.  A part that I look forward to every day. Luckily blogging is a good habit. I do possess bad habits I would like to break.  One of them being - thinking of myself first before others.  So I would like to make charity a habit.  Meaning every day I wake up, I think of something I can do to make someone else's life better.  Following is a list of 30 charities.  Some involve donations, service, and many are random acts of kindness we can practice. For the next 30 days, I will participate in a charitable act and bring awareness to these very worthy causes. I hope it helps you learn more about a charity you can make a difference for.
